Protein Powder Berry Crumble

This protein powder berry crumble is made with whey protein powder. Not just for dessert, this high protein recipe is perfect for a healthy snack or even breakfast!

Ingredients

  • 1 c frozen berries (I like half wild blueberries, half raspberries)
  • 1 tsp Truvia or equivalent
  • 1 serving whey protein powder unflavored or vanilla
  • 2 tbsp slivered almonds
  • 1/4 c rolled oats
  • 1 tsp vanilla
  • 2 tbsp lemon juice

Instructions

  • Preheat oven to 350F. (Toaster oven is perfect for this single serve recipe.)
  • Toss frozen berries with Truvia and place into a small oven-safe baking dish/bowl. (Mine is about 6”x6”)
  • In a small bowl, use a fork to mix together protein powder, almonds, oats, vanilla and lemon juice. 
  • Spread crumble topping on top of berries and give it a light coating with coconut oil spray. (Optional, but helps it brown.)
  • Bake for 15 minutes or until lightly browned and crispy on top.

Notes

To serve, I like to dump it out into another bowl so the crumble topping and berries get well mixed together. By the way, if you serve this with a side of creamy vanilla protein pudding (recommended!!) or frozen yogurt, one recipe is easily split to serve two! My husband loves this for dessert as much as I do. Enjoy!
